It's All About the Chicken

Amazing new meals have been coming across our dinner table!

Summer is my favorite time of year. I love getting the grill fired up, sitting outside, cooking my food, sipping some wine, and hanging out with the kids.

Several weeks ago I pulled out two different frozen chicken meals from the freezer. We quickly had a variety of chicken to eat and plenty left over for another meal later in the week.

These are great served over a bed of rice. I prefer to eat mine on a bun!
Here is the Hawaiian Chicken recipe

Hawaiian Chicken (#1)  
In Freezer Bag    1½ to 2 lbs boneless skinless chicken breasts  
¼ cup pineapple juice (from 15.5 oz can)  
10 pineapple slices (from 15.5 oz can)  
2 Tablespoons Wildtree Balsamic Dipping Oil  
1½ Tablespoons Wildtree Red Bell Pepper & Garlic Blend  
1 teaspoon Wildtree Rancher Steak Rub  
½‐1 teaspoon crushed red pepper flakes (optional) 

To prep: place this in the freezer bag and freeze. This, of course, can also be prepared right on the spot.

Chicken is pretty much a staple in our household. We raise our own chickens which saves a lot of money, we know exactly where our food is coming from, and I always have a supply on hand in my freezer.

Last week I pulled the Chicken Enchilada Lasagna out. 
This uses the very yummy Tia Rosa's Red Enchilada Sauce. It is not very spicy so it was perfect for my youngest son.
I had everything except the tortillas in the freezer bag. I left the chicken separate from the sauce so I could brown the chicken before combining it all.

Chicken with the grapeseed oil in another bag. I also added a tad bit more oil in the pan when I cooked the chicken. There was also a bag with cheese in it.

Here is the recipe: Once again, this doesn't have to be prepared and frozen it can be prepped right on the spot. I chose to freeze it when I was doing other meal preps.

Ingredients

1 tablespoon Wildtree Natural Grapeseed Oil
2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 (15 ounce) can black beans, drained and rinsed
3/4 cup Wildtree Tia Rosa's Red Enchilada Sauce
1/2 cup water
8 corn tortillas
1 cup shredded Mexican cheese blend, divided

Method of Preparation

Preheat oven to 350°F and grease a 9 x 9 inch baking dish. Sauté chicken for 5-10 minutes until chicken is lightly browned and cooked through: 165°F. Stir in black beans, Tia Rosa's Red Enchilada Sauce, and water. Bring to a simmer and remove from heat. Place corn tortillas in the prepared 9 x 9 inch baking dish in a single layer, tearing tortillas to fill gaps as needed. Top with 1/3 of the chicken filling and sprinkle with 1/4 cup shredded Mexican cheese blend. Repeat this process with two more layers of tortillas. Sprinkle the remaining cheese on top and bake for 10 minutes until cheese is melted. Serve garnished with scallions if desired.

Home made FROZEN Pizza

I had so much fun this weekend prepping home made pizzas. I have made home made pizza on many occasions. They have always turned out fabulous and left us wanting more. Making pizza takes time when you have to prep the dough. I had to be sure I had plenty of time allotted for this task so it would be ready for dinner. It usually happened on a Saturday or Sunday. As we sat and ate a frozen pizza one night (because I didn't want to make one from scratch) I thought, "Heck, my pizzas are so much better than this. I bet I can freeze my own."

I started making a list of what kind we wanted to stock up on and most importantly how could I use my Wildtree products to make these. I know we have So Quick and Easy Pizza Dough which can be prepped in about 20 minutes. It also comes in whole wheat. First thing needed pizza dough. I also make my own dough in my bread mixer which takes 1.5 hours but is really very tasty too! I actually made both batches of dough so I could keep production going. 

So the pizzas we listed were veggie, taco, breakfast, Hawaiian, alfredo chicken and bacon, sausage and bacon, and bbq chicken. I completed all but the chicken pizzas.


I made a list of Wildtree products I had in the refrigerator and on hand that were opened and should be used up. Especially the sauces. That is where the BBQ came in. We sell 3 different types of BBQ sauce! I also had Tia Rosa's Enchilada Sauce which would be great as a sauce for the taco salad. Infused grapeseed oils have become a permanent item in our pantry.
The oils are AMAZING used in the dough. So much flavor! I actually used butter grapeseed oil and Smokey Bacon Grapeseed Oil in my dough this time. Usually I use the Garlic infused grapeseed oil.


Rather than go on and on I am going to post pictures and explain how I used Wildtree products to make these fabulous pizzas.
1 tbs Wildtree pizza sauce seasoning put in a 15oz can of tomato sauce, wha-la, pizza sauce!



Wildtree Taco Seasoning used to make my taco meat. I used turkey burger. Added black olives, peppers, onions, a can of rotel tomatoes, and fiesta blend cheese. I  should have used Tia Rosa's Enchilada Sauce but used the pizza sauce instead. For extra spice I could have used the fiesta blend seasoning sprinkled on top. I wanted to hold off on too much spice as my youngest isn't big on 'hot'.

Taco sauce would have been good too! The Golden BBQ sauce is going to be used on BBQ chicken pizza.


Next up was breakfast pizza. I used my own homemade peach salsa as the base. Added our farm fresh from the backyard eggs (scrambled), nitrate free bacon, and farm fresh pork sausage. I caramelized the onions in the bacon grease. I topped it off with sharp cheddar cheese. I so loved this pizza because it was all organic except for the cheese.

Hawaiian Pizza consisted of the pizza sauce, pineapple, Canadian bacon, a little regular bacon, and mozzarella cheese. We actually at this one for lunch today and they were fighting over the last piece.

So, as far as prepping the pizzas go, here is the quick and simple:
Prepare the dough, form into pizzas (whatever shape works for you, mine are usually odd shaped but that's ok~),




bake the dough by itself at 450F for 3-5 minutes. 
Allow it to cool
Place toppings on pizza
Freeze unwrapped for 3 hours to set. You can use the cardboard used for cakes as a base
Once set, wrap in plastic wrap



Then wrap in aluminum foil


Label and place in freezer
To cook preheat oven to 425F, bake 12-15 or until cheese is melted.

There you have it! Frozen pizzas made fresh and healthy!

Another Journey - Wildtree

Today marks the first day of a new blog in another journey of my life, Wildtree. What is Wildtree you ask? Wildtree is an amazing company started by a mom, Leslie Montie, who wanted to make dinners for her family that were healthy for her children with dietary restrictions. She wanted meals that were nutritious, unprocessed, and easy to prep. She started experimenting with herbs and spices making meals and storing them in bags. Eventually her neighbors wanted in on this idea. She eventually started selling her blends at home parties. Wildtree is now found all across the country and made from ingredients that are non GMO, free of preservatives, additives, MSG, and dyes. 

I first attended a freezer meal prepping party back in October 2015. I was immediately hooked on the concept. I have to admit at first I cringed when they told me I needed to pay $80 up front and then still buy groceries. But, I was curious and goodness knows, I needed to save time and have some healthy meals. See, I started working a second shift job (3:30-midnight). My husband and kids were left to fend for dinner by themselves!! 

Long story short, we all fell in love with the product, the meals, and concept of meals prepped and ready in the freezer. Here is a little picture of how it works. Yes, I did save money too! Imagine not running to the grocery store a couple times a week going in for just one or two items to complete the meal you want to make tomorrow and coming out with a cart full of food you don't need spending $100 instead of the $20. With the meals prepped ahead of time you are not headed to the store all the time. I make my meals for the $80 of the products which I have LEFT OVER product to prep even more meals and usually around $100 for groceries. This preps 10 meals plus for my family of 4 and we usually have left overs. I end up prepping about 3 of these meals a week. The other days are leftovers. We also save money by not going out to eat. These meals are so good even my kids prefer to eat at home.
The other thing that hooked me onto Wildtree is that I raise our own chickens for meat and eggs. There is nothing worse than spending 8-10 weeks raising these chickens to be organic and knowing what I put in their bodies only to put some seasoning on it that is full of the stuff I was avoiding! We also buy local organic pork and are now raising turkey.

After attending 2 workshops I took the plunge in January 2016 as a Christmas present to myself, to join Wildtree as a Representative. I have loved every minute of sharing Wildtree with others at workshops or just as individual ingredients and recipes. My family loves the meals and love the spices. They enjoy prepping their own meals and trying out different things. It is truly a dream job.

With this blog I plan to post weekly tips, tricks, recipes, and other healthy ways to keep your meal times tame and putting healthy food on your table.
